For the Shrimp
- 1 lb shrimp (peeled and deveined)
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- Juice of ½ lime
For the Burrito Filling
- 1 cup cooked rice
- 1 cup black beans
- ½ cup corn
- ½ cup diced tomatoes
- ½ cup shredded lettuce
- ½ cup shredded cheese (cheddar or Monterey Jack)
- ¼ cup sour cream or Greek yogurt
- ¼ cup salsa
- 4 large flour tortillas
Prepare the Shrimp: In a mixing bowl, toss the shrimp with olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Heat a large skillet over medium heat and cook the shrimp for 2-3 minutes per side until pink and fully cooked. Squeeze fresh lime juice over the shrimp and set aside. Prepare the Filling: If not pre-cooked, cook the rice according to package instructions. In a small saucepan, warm the black beans and corn over low heat. Assemble the Burritos: Lay a tortilla flat and add a layer of rice in the center. Top with black beans, cooked shrimp, diced tomatoes, lettuce, shredded cheese, and a drizzle of sour cream and salsa. Fold and Serve: Fold in the sides of the tortilla and roll it up tightly to form a burrito. Optionally, place the burrito seam-side down in the skillet for 1-2 minutes to toast the exterior.
