Ingredients
  

For the Shrimp

  • 1 lb shrimp (peeled and deveined)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of ½ lime

For the Burrito Filling

  • 1 cup cooked rice
  • 1 cup black beans
  • ½ cup corn
  • ½ cup diced tomatoes
  • ½ cup shredded lettuce
  • ½ cup shredded cheese (cheddar or Monterey Jack)
  • ¼ cup sour cream or Greek yogurt
  • ¼ cup salsa
  • 4 large flour tortillas

Instructions
 

  • Prepare the Shrimp:
    In a mixing bowl, toss the shrimp with olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Heat a large skillet over medium heat and cook the shrimp for 2-3 minutes per side until pink and fully cooked. Squeeze fresh lime juice over the shrimp and set aside.

  • Prepare the Filling:
    If not pre-cooked, cook the rice according to package instructions. In a small saucepan, warm the black beans and corn over low heat.

  • Assemble the Burritos:
    Lay a tortilla flat and add a layer of rice in the center. Top with black beans, cooked shrimp, diced tomatoes, lettuce, shredded cheese, and a drizzle of sour cream and salsa.

  • Fold and Serve:
    Fold in the sides of the tortilla and roll it up tightly to form a burrito. Optionally, place the burrito seam-side down in the skillet for 1-2 minutes to toast the exterior.
